​If you are a deep-fried turkey enthusiast you probably already know how to safely cook the bird, however many first timers easily make mistakes that can cause serious fires. 

  • Fire departments respond to more than 1,000 fires each year involving a deep-fryer
  • Deep-fryer fires result in more than $15 million in property damage each year and can cause serious burns to an adult or life threatening injuries to a child

Before you deep fry your turkey this year, take a few minutes to review the safety tips so that you can enjoy that incredibly moist and flavorful bird. If you don’t follow these tips, things could go horribly wrong very quickly. 

  1. Hot oil is extremely dangerous, so never use a turkey fryer on a wooden deck or your garage.
  2. Make sure the turkey is thawed and dry before cooking.  Ice or water that mixes with the hot oil can cause flare-ups.
  3. Watch the weather.  Never operate a fryer outdoors in the rain or snow.
  4. Place the fryer on a level surface and avoid moving it once it’s in use.
  5. Leave 2 feet between the tank and the burner when using a propane-powered fryer.
  6. Follow the manufacturer’s instructions to avoid overfilling.  Oil can ignite when it makes contact with the burner.
  7. Choose a smaller turkey for frying.  A bird that is 8 to 10 pounds is best.
  8. Never leave fryers unattended.
  9. Make sure you purchase a fryer that has temperature controls and pay close attention to the oil temperature.  Cooking oil that is heated beyond its smoke point can catch fire.   10. If you notice the oil is smoking, turn the fryer off and immediately leave the pot uncovered to cool.
  11. Turn off the burner before lowering the turkey into the oil.  Once the turkey is submerged, tur the burner on.  Lower and raise the turkey slowly to reduce splatter and burn. 
  12. Protect your skin and eyes.  Wear goggles to shield your eyes and use oven mitts to protect your hands and arms.   Keep a grease-rated fire extinguisher close by.
  13. Skip the stuffing when frying turkey, and avoid water-based marinades.
  14. Keep children and pets away from the fryer at all times.
  15. Once finished, carefully remove the pot from the burner, place it on a level surface and cover to let the oil cool overnight before disposing.
